Crack Cocaine Cookies

Every now and then, you need a treat. A hot drink is instantly made better when you have something to dunk in it. These cookies are a pantry staple in my house. My daughter loves to bake (which tests my self-control on a daily basis) and stumbled upon this magical combination of ingredients by adding everything she could find in the pantry.

We knew after one bite we were on to a winner. The addition of oats, seeds and dark chocolate means they are arguably definable as healthy cookies. The beauty of a good thing comes from sharing it, and it seems unfair to keep this cookies a secret.


They do contain raisins, which is a controversial ingredient on its own, but they can easily be omitted. The beautiful thing about these cookies is you can alter them to suit your cookie preferences and pantry items. We tend to eyeball the add-ins, so just add how much you want.

Ingredients


- 275g demerara sugar

- 175g butter

- 1 egg

- 1 tsp vanilla essence

- 4 Tbsp water

- 140g cake flour

- 375g oats

- 1 tsp salt

- 1/2 tsp bicarbonate of soda


add - ins

- 100g dark chocolate

- mixed seeds

- raisins

- dried cranberries


Method

1. Preheat oven to 180 degrees Celsius. Grease a large baking sheet.

2. Cream butter and sugar in a large mixing bowl. Beat in the egg, water and vanilla extract until mixture is smooth.

3. In a separate bowl, combine the flour, oats, salt and bicarbonate of soda.

4. Gradually stir the oat mixture into the creamed mixture until thoroughly combined.

5. Mix in all your add-ins until evenly incorporated.

6. Place tablespoon-sized heaps of the mixture on your baking tray. Make sure they're well spaced - these babies tend to spread. Bake for approximately 15 minutes or until golden brown.

7. Enjoy (in possibly one sitting),
